This half day tour takes you up close to some of the Caribbean Sea’s most dramatic wildlife
El Ultimo Refugio
| Location: | Bocas town, Isla Colón |

Extending out over the ocean, the quaint wooden architecture and open sides of this restaurant leave diners exposed to refreshing sea breezes as they tuck in to the succulent international cuisine. There is regular live music, and the walls are decorated with the works of local artists, lit by soft fairy lights and candles.
We also have a well-stocked bar, and a selection of delicious tropical cocktails and sangria.
Our Menu
El Ultimo Refugio's menu changes daily, and is based around the freshest items that can be found at the time. Main courses generally include seafood, meat, chicken and salad each day. Vegetarian options are always available, just ask!
Locally-themed dishes include Caribbean fish fritters, passion fruit shrimp, sesame seared tuna, mahi-mahi with coconut cream sauce, buffalo fried calamari, ceviche, and jungle chicken in a peanut coconut curry sauce with sautéed pumpkin
If you still have room for dessert, you will love our vanilla and passion fruit terrine, and the unbelievably irresistible Snicker peanut butter pie with hot fudge sauce!

Sustainability
- We use a 200 gallon rain water tank to wash dishes, flush toilets, etc.
- We use low impact lighting (Christmas lights) instead of light bulbs, and candles.
- The restaurant is over the water, and open to the breeze on three sides, therefore we have no need for air conditioning.
- Organic waste is returned to the sea, while cans, bottles and glass are recycled.
- Natural and reclaimed materials are used for decoration and construction.
- Herbs and some produce such as limes and collard greens are sourced from island gardens and farms, the rest of the produce is from around Panama.
- We also support local and travelling musicians by providing a venue for them to share their talents, as well as local artists whose colorful murals grace El Ultimo Refugio's walls.
